Ingredients
- 4 large eggs
- 150 g feta cheese
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- Fresh herbs (parsley or basil) for garnish
Instructions
- Preheat the oven to 180°C (350°F).
- In a baking dish, add spinach, cherry tomatoes, and minced garlic.
- Drizzle with olive oil and sprinkle oregano, paprika, salt, and pepper.
- Place the block of feta cheese in the center.
- Bake for 15 minutes until the vegetables soften and feta begins to melt.
- Remove from oven and stir slightly to combine flavors.
- Create small wells and crack the eggs into the dish.
- Return to the oven and bake for another 8–10 minutes, or until eggs are set to your liking.
- Garnish with fresh herbs and serve warm.
Notes
- Use baby spinach for a more tender texture.
- Add chili flakes for a spicy kick.
- Serve with crusty bread or toast.
- Do not overbake the eggs to keep yolks soft.
