Ingredients

  • 4 large eggs
  • 150 g feta cheese
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Fresh herbs (parsley or basil) for garnish


Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a baking dish, add spinach, cherry tomatoes, and minced garlic.
  3. Drizzle with olive oil and sprinkle oregano, paprika, salt, and pepper.
  4. Place the block of feta cheese in the center.
  5. Bake for 15 minutes until the vegetables soften and feta begins to melt.
  6. Remove from oven and stir slightly to combine flavors.
  7. Create small wells and crack the eggs into the dish.
  8. Return to the oven and bake for another 8–10 minutes, or until eggs are set to your liking.
  9. Garnish with fresh herbs and serve warm.
