Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 tablespoons frozen lemonade concentrate
  • 1 teaspoon lemon zest
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • 2 cups whipped topping, divided
  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Fresh blueberries and lemon slices for garnish (optional)


Instructions

  1. Combine graham cracker crumbs and melted butter in a bowl.
  2. Press the mixture firmly into the bottom of a 9×13-inch baking dish and refrigerate for 15 minutes.
  3. In a saucepan, combine blueberries, granulated sugar, and lemon juice over medium heat.
  4. Mix cornstarch with water and stir into the blueberries.
  5. Cook until thickened, about 3-5 minutes. Cool completely.
  6. In a large bowl, beat cream cheese, powdered sugar, lemonade concentrate, and lemon zest until smooth.
  7. In a separate bowl, whisk pudding mix and milk until thickened.
  8. Fold pudding into the cream cheese mixture.
  9. Fold in 1 cup whipped topping until light and fluffy.
  10. Spread the lemonade cream filling evenly over the chilled crust.
  11. Spoon the cooled blueberry topping over the cream layer.
  12. Spread the remaining whipped topping over the blueberries.
  13. Garnish with additional blueberries and lemon slices if desired.
  14. Refrigerate for at least 4 hours before slicing and serving.
