Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 2 tablespoons frozen lemonade concentrate
- 1 teaspoon lemon zest
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 1/2 cups cold milk
- 2 cups whipped topping, divided
- 2 cups fresh blueberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 2 tablespoons water
- Fresh blueberries and lemon slices for garnish (optional)
Instructions
- Combine graham cracker crumbs and melted butter in a bowl.
- Press the mixture firmly into the bottom of a 9×13-inch baking dish and refrigerate for 15 minutes.
- In a saucepan, combine blueberries, granulated sugar, and lemon juice over medium heat.
- Mix cornstarch with water and stir into the blueberries.
- Cook until thickened, about 3-5 minutes. Cool completely.
- In a large bowl, beat cream cheese, powdered sugar, lemonade concentrate, and lemon zest until smooth.
- In a separate bowl, whisk pudding mix and milk until thickened.
- Fold pudding into the cream cheese mixture.
- Fold in 1 cup whipped topping until light and fluffy.
- Spread the lemonade cream filling evenly over the chilled crust.
- Spoon the cooled blueberry topping over the cream layer.
- Spread the remaining whipped topping over the blueberries.
- Garnish with additional blueberries and lemon slices if desired.
- Refrigerate for at least 4 hours before slicing and serving.

- Fresh blueberries provide the best texture, but frozen blueberries can be substituted.
