Ingredients

  • 2 cups crushed pretzels
  • 3/4 cup unsalted butter, melted
  • 3 tablespoons granulated sugar
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 container (8 oz) whipped topping, thawed
  • 1 package (3 oz) lemon gelatin
  • 1 cup boiling water
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 cups fresh blueberries
  • 1 cup cold water
  • Additional whipped topping for garnish
  • Lemon slices and blueberries for garnish


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine crushed pretzels, melted butter, and granulated sugar in a bowl.
  3. Press the mixture firmly into the bottom of a 9×13-inch baking dish.
  4. Bake for 10 minutes, then cool completely.
  5. Beat cream cheese, powdered sugar, and vanilla extract until smooth.
  6. Fold in the whipped topping.
  7. Spread the cream cheese mixture evenly over the cooled crust.
  8. Refrigerate while preparing the topping.
  9. Dissolve lemon gelatin in boiling water.
  10. Stir in cold water, lemon juice, and lemon zest.
  11. Allow the mixture to cool slightly.
  12. Fold in the blueberries.
  13. Carefully pour the blueberry lemonade mixture over the cream layer.
  14. Refrigerate for at least 4 hours or until fully set.
  15. Garnish with whipped topping, lemon slices, and fresh blueberries before serving.
