Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 box (8.5 oz) cornbread mix
  • 1 large egg
  • 1/3 cup milk
  • 1/2 cup sour cream
  • 1/4 cup diced dill pickles (optional)
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9-inch pie dish or baking dish.
  2. Heat olive oil in a skillet over medium heat.
  3. Add onion and cook for 3-4 minutes until softened.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  6. Stir in ketchup, mustard, Worcestershire sauce, salt, and black pepper.
  7. Spread the beef mixture evenly into the prepared dish.
  8. Sprinkle 1 cup of cheddar cheese over the beef.
  9. In a separate bowl, prepare the cornbread mix with the egg, milk, and sour cream.
  10. Pour the cornbread batter evenly over the beef layer.
  11. Top with the remaining cheddar cheese.
  12. Bake for 30-35 minutes until the cornbread is golden and cooked through.
  13. Let rest for 10 minutes before serving.
  14. Garnish with diced pickles and fresh parsley if desired.
