Description

Cheesy Chicken Broccoli Rice Casserole is a comforting, hearty dish made with tender chicken, fluffy rice, crisp broccoli, and a creamy cheesy sauce baked to golden perfection.


Ingredients

  • 2 cups cooked rice
  • 2 cups cooked chicken breast, diced
  • 2 cups broccoli florets (steamed)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp olive oil or butter


Instructions

  1. Preheat oven to 180°C (350°F) and grease a baking dish.
  2. In a large bowl, mix cooked rice, diced chicken, and steamed broccoli.
  3. In another bowl, combine cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
  4. Pour the sauce over the rice mixture and stir until evenly coated.
  5. Fold in half of the cheddar and mozzarella cheese.
  6. Transfer the mixture to the prepared baking dish and spread evenly.
  7. Top with remaining cheese.
  8. Drizzle olive oil or melted butter on top.
  9. Bake for 25–30 minutes until bubbly and golden.
  10. Let cool slightly before serving.

  • Use brown rice for a healthier option.
  • Substitute cream of chicken with cream of mushroom if preferred.
  • Add breadcrumbs on top for a crunchy crust.
