Ingredients
- 2 cups cooked rice
- 2 cups cooked chicken breast, diced
- 2 cups broccoli florets (steamed)
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup mozzarella cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 tbsp olive oil or butter
Instructions
- Preheat oven to 180°C (350°F) and grease a baking dish.
- In a large bowl, mix cooked rice, diced chicken, and steamed broccoli.
- In another bowl, combine cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
- Pour the sauce over the rice mixture and stir until evenly coated.
- Fold in half of the cheddar and mozzarella cheese.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Top with remaining cheese.
- Drizzle olive oil or melted butter on top.
- Bake for 25–30 minutes until bubbly and golden.
- Let cool slightly before serving.

- Use brown rice for a healthier option.
- Substitute cream of chicken with cream of mushroom if preferred.
- Add breadcrumbs on top for a crunchy crust.
