Description

Cherry Limeade Icebox Bars are a refreshing no-bake dessert featuring a buttery graham cracker crust topped with a creamy cherry-lime filling. These chilled bars deliver the perfect balance of sweet cherries and tangy lime in every bite.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 8 oz cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling
  • 1 cup whipped topping, thawed
  • Fresh cherries for garnish (optional)
  • Lime slices or zest for garnish


Instructions

  1. Line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar.
  3. Press the mixture firmly into the bottom of the prepared dish.
  4. Refrigerate the crust for 20 minutes.
  5. In a large bowl, beat cream cheese until smooth.
  6. Add sweetened condensed milk, lime juice, lime zest, and vanilla extract. Mix until creamy.
  7. Fold in the whipped topping until fully incorporated.
  8. Spread half of the lime filling over the chilled crust.
  9. Spoon half of the cherry pie filling over the lime layer and gently swirl.
  10. Add the remaining lime filling and top with the remaining cherry pie filling.
  11. Create decorative swirls using a knife.
  12. Cover and refrigerate for at least 4 hours or until firm.
  13. Lift from the pan, slice into bars, and garnish with fresh cherries and lime zest.
  14. Serve chilled.
