Cherry Limeade Icebox Bars are a refreshing no-bake dessert featuring a buttery graham cracker crust topped with a creamy cherry-lime filling. These chilled bars deliver the perfect balance of sweet cherries and tangy lime in every bite.
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 8 oz cream cheese, softened
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup fresh lime juice
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
- 1 cup cherry pie filling
- 1 cup whipped topping, thawed
- Fresh cherries for garnish (optional)
- Lime slices or zest for garnish
Instructions
- Line an 8×8-inch baking dish with parchment paper.
- In a bowl, combine graham cracker crumbs, melted butter, and sugar.
- Press the mixture firmly into the bottom of the prepared dish.
- Refrigerate the crust for 20 minutes.
- In a large bowl, beat cream cheese until smooth.
- Add sweetened condensed milk, lime juice, lime zest, and vanilla extract. Mix until creamy.
- Fold in the whipped topping until fully incorporated.
- Spread half of the lime filling over the chilled crust.
- Spoon half of the cherry pie filling over the lime layer and gently swirl.
- Add the remaining lime filling and top with the remaining cherry pie filling.
- Create decorative swirls using a knife.
- Cover and refrigerate for at least 4 hours or until firm.
- Lift from the pan, slice into bars, and garnish with fresh cherries and lime zest.
- Serve chilled.
