Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee
  • 3 cups fresh strawberries, diced
  • 1/3 cup granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 cups heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • Chocolate shavings and whole strawberries for garnish


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. Whisk together flour, cocoa powder, baking powder, baking soda, salt, and sugar.
  3. Add eggs, buttermilk, oil, and vanilla extract. Mix until smooth.
  4. Slowly stir in hot coffee until fully incorporated.
  5. Divide batter evenly between prepared pans.
  6. Bake for 28-32 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool cakes completely.
  8. For the filling, combine strawberries and sugar in a saucepan over medium heat.
  9. Mix cornstarch with water and stir into the strawberries.
  10. Cook until thickened, then cool completely.
  11. Whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  12. Place one cake layer on a serving plate and spread a layer of whipped cream.
  13. Spread half of the strawberry filling over the cream.
  14. Top with the second cake layer.
  15. Frost the top and sides with the remaining whipped cream.
  16. Decorate with remaining strawberry filling, chocolate shavings, and whole strawberries.
  17. Chill for 30 minutes before slicing and serving.
