Creamy Cottage Cheese Chicken Pasta is a high-protein, comforting dish made with tender chicken, pasta, and a smooth cottage cheese sauce for a lighter yet creamy meal.


Ingredients

  • 2 cups cooked pasta (penne or fusilli)
  • 1 cup cooked chicken breast, diced
  • 1 cup cottage cheese
  • 1/2 cup milk
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/4 tsp chili flakes (optional)
  • 2 tbsp fresh parsley, chopped


Instructions

  1. Cook pasta according to package instructions, then drain and set aside.
  2. In a blender, combine cottage cheese and milk, and blend until smooth and creamy.
  3. Heat olive oil in a pan over medium heat and sauté minced garlic until fragrant.
  4. Add cooked chicken and season with salt, pepper, Italian seasoning, and chili flakes.
  5. Pour in the blended cottage cheese sauce and stir gently.
  6. Add Parmesan cheese and cook on low heat until warmed through (do not boil).
  7. Add cooked pasta and toss until well coated in the sauce.
  8. Garnish with fresh parsley and serve warm.
