Ingredients
- 1 lb sirloin steak, cut into bite-sized pieces
- 12 oz penne or rotini pasta
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 5 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon paprika
- 1/2 teaspoon crushed red pepper flakes
- 1 teaspoon dried parsley
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried chives
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1 cup freshly grated parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
- Season steak bites with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium-high heat.
- Sear steak bites for 3-4 minutes until browned and cooked to desired doneness. Remove and set aside.
- Reduce heat to medium and melt butter in the same skillet.
- Add garlic and sauté for 30 seconds until fragrant.
- Whisk in Dijon mustard, lemon juice, red pepper flakes, dried parsley, thyme, and chives.
- Pour in heavy cream and bring to a gentle simmer.
- Stir in parmesan cheese until melted and smooth.
- Add reserved pasta water if needed to loosen the sauce.
- Return cooked pasta and steak to the skillet and toss until evenly coated.
- Garnish with fresh parsley and serve immediately.
Notes
- Ribeye steak can be used for an even richer flavor.
- Freshly grated parmesan melts more smoothly than pre-shredded cheese.
- Adjust red pepper flakes to control the spice level.
- Do not overcook the steak to keep it tender.
