Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 cups mushrooms, sliced
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped parsley (optional)
Instructions
- Season chicken breasts with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat and sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
- In the same pan, melt butter and sauté mushrooms until browned and tender.
- Add garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and let it simmer for 2–3 minutes, scraping up browned bits.
- Stir in heavy cream, Parmesan cheese, and thyme. Simmer until the sauce thickens.
- Return chicken to the pan and coat with the creamy mushroom sauce.
- Cook for another 3–5 minutes until heated through.
- Garnish with chopped parsley and serve hot.
