Ingredients
- 12 oz pasta (penne or fettuccine)
- 1 lb boneless skinless chicken breasts, sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, drained and chopped
- 2 cups heavy cream
- 1 cup grated parmesan cheese
- 1/2 cup chicken broth
- 2 cups fresh spinach
- 1/2 teaspoon red pepper flakes (optional)
- Fresh basil or parsley for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Season the chicken with salt, black pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken and cook for 5-7 minutes until golden brown and fully cooked. Remove and set aside.
- In the same skillet, sauté garlic for 30 seconds until fragrant.
- Add sun-dried tomatoes and cook for 1-2 minutes.
- Pour in chicken broth and heavy cream, stirring well.
- Bring to a gentle simmer and stir in parmesan cheese until melted and smooth.
- Add spinach and cook until wilted.
- Return the chicken to the skillet along with the cooked pasta.
- Toss everything together until evenly coated in the creamy sauce.
- Garnish with basil or parsley and serve warm.
Notes
- Use oil-packed sun-dried tomatoes for the best flavor.
- Add extra broth or pasta water if the sauce becomes too thick.
- You can substitute shrimp for chicken if desired.
- Freshly grated parmesan melts more smoothly into the sauce.
