Description

Creamy Sun Dried Tomato Chicken Pasta is a rich and flavorful pasta dish made with tender chicken, garlic, parmesan cream sauce, and tangy sun-dried tomatoes tossed with perfectly cooked pasta.


Ingredients

  • 12 oz pasta (penne or fettuccine)
  • 1 lb boneless skinless chicken breasts, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, drained and chopped
  • 2 cups heavy cream
  • 1 cup grated parmesan cheese
  • 1/2 cup chicken broth
  • 2 cups fresh spinach
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh basil or parsley for garnish


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Season the chicken with salt, black pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the chicken and cook for 5-7 minutes until golden brown and fully cooked. Remove and set aside.
  5. In the same skillet, sauté garlic for 30 seconds until fragrant.
  6. Add sun-dried tomatoes and cook for 1-2 minutes.
  7. Pour in chicken broth and heavy cream, stirring well.
  8. Bring to a gentle simmer and stir in parmesan cheese until melted and smooth.
  9. Add spinach and cook until wilted.
  10. Return the chicken to the skillet along with the cooked pasta.
  11. Toss everything together until evenly coated in the creamy sauce.
  12. Garnish with basil or parsley and serve warm.

  • Use oil-packed sun-dried tomatoes for the best flavor.
  • Add extra broth or pasta water if the sauce becomes too thick.
  • You can substitute shrimp for chicken if desired.
