Ingredients
- 8 oz halloumi cheese, sliced into strips
- 4 large tortillas or flatbreads
- 1 tablespoon olive oil
- 1 cup shredded lettuce
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- For the Garlic Herb Sauce:
- 1/2 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a small bowl, whisk together Greek yogurt, lemon juice, garlic, dill, parsley, salt, and black pepper to prepare the sauce.
- Heat olive oil in a skillet over medium-high heat.
- Add halloumi slices and cook for 2-3 minutes per side until golden brown and crispy.
- Remove halloumi from the skillet and set aside.
- Warm the tortillas or flatbreads.
- Spread a generous amount of garlic herb sauce over each wrap.
- Layer lettuce, cucumber, tomatoes, red onion, and parsley on each wrap.
- Top with crispy halloumi strips.
- Fold in the sides and roll tightly into wraps.
- Slice in half and serve immediately.

- Halloumi should be served immediately after cooking for the best texture.
- Add avocado or roasted red peppers for extra flavor.
- Whole wheat wraps can be used for additional fiber.
