Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- 2 cups fresh spinach
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese (for sauce)
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
- Beat the egg in a separate bowl.
- Dip chicken breasts into egg, then coat with the Parmesan breadcrumb mixture.
- Heat olive oil in a skillet over medium heat and sear chicken for 3–4 minutes per side until golden.
- Transfer chicken to a baking dish and bake for 15–18 minutes until cooked through.
- In the same skillet, melt butter and sauté garlic until fragrant.
- Add spinach and cook until wilted.
- Pour in heavy cream and stir in Parmesan cheese. Simmer until thickened.
- Serve chicken with creamy spinach sauce.
Notes
- Pound chicken for even thickness.
- Use panko breadcrumbs for extra crunch.
- Add mushrooms for more flavor in the sauce.
- Do not overcook chicken to keep it juicy.
- Serve with pasta, rice, or mashed potatoes.
