Description

High Protein Cottage Cheese Egg Bites are fluffy, savory mini egg muffins blended with cottage cheese for extra protein, baked until soft and perfect for a quick breakfast or meal prep snack.


Ingredients

  • 6 large eggs
  • 1 cup (225 g) cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 cup bell pepper, finely diced
  • 2 tbsp green onions, chopped
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray or butter for greasing


Instructions

  1. Preheat the oven to 175°C (350°F) and lightly grease a muffin tin or silicone muffin mold.
  2. In a blender combine eggs, cottage cheese, milk, garlic powder, salt, and black pepper.
  3. Blend until smooth and slightly frothy.
  4. Stir in shredded cheddar cheese, diced bell pepper, and chopped green onions.
  5. Pour the mixture evenly into the prepared muffin cups, filling each about 3/4 full.
  6. Bake for 18–22 minutes until the egg bites are set and slightly golden on top.
  7. Allow them to cool for 5 minutes before removing from the pan.
  8. Serve warm or store for later meal prep.

Notes

  • Use silicone muffin molds for easier removal.
  • Add spinach, mushrooms, or cooked turkey for extra flavor and protein.
  • Store in the refrigerator for up to 4 days.
  • Reheat in the microwave for 20–30 seconds before serving.
