High Protein Cottage Cheese Egg Bites are fluffy, savory mini egg muffins blended with cottage cheese for extra protein, baked until soft and perfect for a quick breakfast or meal prep snack.
Ingredients
- 6 large eggs
- 1 cup (225 g) cottage cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 1/4 cup bell pepper, finely diced
- 2 tbsp green onions, chopped
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- Cooking spray or butter for greasing
Instructions
- Preheat the oven to 175°C (350°F) and lightly grease a muffin tin or silicone muffin mold.
- In a blender combine eggs, cottage cheese, milk, garlic powder, salt, and black pepper.
- Blend until smooth and slightly frothy.
- Stir in shredded cheddar cheese, diced bell pepper, and chopped green onions.
- Pour the mixture evenly into the prepared muffin cups, filling each about 3/4 full.
- Bake for 18–22 minutes until the egg bites are set and slightly golden on top.
- Allow them to cool for 5 minutes before removing from the pan.
- Serve warm or store for later meal prep.
Notes
- Use silicone muffin molds for easier removal.
- Add spinach, mushrooms, or cooked turkey for extra flavor and protein.
- Store in the refrigerator for up to 4 days.
- Reheat in the microwave for 20–30 seconds before serving.
