Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 tablespoons sugar
  • 1 can (400g) sweetened condensed milk
  • 1/2 cup frozen lemonade concentrate
  • 1 tablespoon lemon zest
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Extra lemon slices or zest for garnish


Instructions

  1. Line a square baking pan with parchment paper.
  2. Mix graham cracker crumbs, melted butter, and sugar until combined.
  3. Press the mixture firmly into the bottom of the pan.
  4. Freeze the crust for 15 minutes.
  5. In a bowl, whisk sweetened condensed milk, lemonade concentrate, lemon zest, and vanilla extract.
  6. In another bowl, whip heavy cream until soft peaks form.
  7. Fold whipped cream into the lemonade mixture until smooth.
  8. Spread filling evenly over the crust.
  9. Freeze for at least 4 hours or until firm.
