Ingredients

  • 1 lb sirloin steak, cut into bite-sized cubes
  • 3 cups baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss potatoes with 2 tablespoons olive oil, salt, pepper, and paprika. Spread on a baking sheet.
  3. Roast potatoes for 25–30 minutes, flipping halfway, until crispy and golden.
  4. Heat remaining olive oil in a skillet over high heat.
  5. Season steak bites with salt, pepper, and thyme.
  6. Sear steak bites for 2–3 minutes per side until browned and cooked to desired doneness. Remove and set aside.
  7. Reduce heat to medium and add butter and garlic to the skillet.
  8. Cook for 1 minute until fragrant, then return steak bites to the pan and toss to coat.
  9. Serve steak bites alongside crispy potatoes, garnished with parsley.

Notes

  • Do not overcrowd the pan when searing steak.
  • Use a hot pan for a good sear.
