Ingredients
- 1 lb sirloin steak, cut into bite-sized cubes
- 3 cups baby potatoes, halved
- 3 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1 tablespoon chopped parsley (optional)
Instructions
- Preheat oven to 425°F (220°C).
- Toss potatoes with 2 tablespoons olive oil, salt, pepper, and paprika. Spread on a baking sheet.
- Roast potatoes for 25–30 minutes, flipping halfway, until crispy and golden.
- Heat remaining olive oil in a skillet over high heat.
- Season steak bites with salt, pepper, and thyme.
- Sear steak bites for 2–3 minutes per side until browned and cooked to desired doneness. Remove and set aside.
- Reduce heat to medium and add butter and garlic to the skillet.
- Cook for 1 minute until fragrant, then return steak bites to the pan and toss to coat.
- Serve steak bites alongside crispy potatoes, garnished with parsley.
Notes
- Do not overcrowd the pan when searing steak.
- Use a hot pan for a good sear.
- Let steak rest briefly before serving.
- Add chili flakes for a spicy kick.
