Description

Soft and tender cookies inspired by classic Boston cream pie, filled with a smooth vanilla cream and topped with a rich chocolate glaze for a decadent handheld dessert.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • 1 cup vanilla pastry cream or pudding
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream (for glaze)


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Add egg and vanilla extract, mixing until combined.
  5. Gradually add dry ingredients alternating with milk, mixing until a soft dough forms.
  6. Scoop tablespoon-sized portions onto the baking sheet and slightly flatten.
  7. Bake for 10–12 minutes until lightly golden. Cool completely.
  8. Spread or pipe vanilla cream onto the flat side of half the cookies, then sandwich with remaining cookies.
  9. Heat heavy cream until warm and pour over chocolate chips. Stir until smooth to make glaze.
  10. Spoon or drizzle chocolate glaze over the tops of the cookies.
  11. Allow glaze to set before serving.
