Description
Soft and tender cookies inspired by classic Boston cream pie, filled with a smooth vanilla cream and topped with a rich chocolate glaze for a decadent handheld dessert.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup milk
- 1 cup vanilla pastry cream or pudding
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup heavy cream (for glaze)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy.
- Add egg and vanilla extract, mixing until combined.
- Gradually add dry ingredients alternating with milk, mixing until a soft dough forms.
- Scoop tablespoon-sized portions onto the baking sheet and slightly flatten.
- Bake for 10–12 minutes until lightly golden. Cool completely.
- Spread or pipe vanilla cream onto the flat side of half the cookies, then sandwich with remaining cookies.
- Heat heavy cream until warm and pour over chocolate chips. Stir until smooth to make glaze.
- Spoon or drizzle chocolate glaze over the tops of the cookies.
- Allow glaze to set before serving.
Notes
- Use store-bought or homemade pastry cream for convenience.
- Ensure cookies are fully cooled before filling to prevent melting.
- Chill cookies briefly to help the glaze set faster.
- Store in the refrigerator due to the cream filling.
