Juicy chicken skewers glazed with a sweet and savory honey garlic sauce, paired with caramelized pineapple chunks for a tropical, crowd-pleasing dish.


Ingredients

  • 1 lb boneless, skinless chicken breast, cut into cubes
  • 2 cups fresh pineapple chunks
  • 3 tablespoons honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon ketchup
  • 1 tablespoon olive oil
  • 1 teaspoon grated ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Wooden or metal skewers
  • Chopped green onions and sesame seeds for garnish (optional)


Instructions

  1. In a bowl, whisk together honey, minced garlic, soy sauce, ketchup, olive oil, ginger, lemon juice, salt, and black pepper.
  2. Add chicken cubes to the marinade and toss to coat. Cover and marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
  3. Preheat grill or oven to medium-high heat (about 400°F / 200°C).
  4. Thread marinated chicken and pineapple chunks alternately onto skewers.
  5. Place skewers on the grill or a lined baking sheet.
  6. Cook for 12–15 minutes, turning occasionally and brushing with extra marinade, until chicken is fully cooked and slightly charred.
  7. Remove from heat and let rest for a few minutes.
  8. Garnish with chopped green onions and sesame seeds if desired, then serve.

Notes

  • Soak wooden skewers in water for 20 minutes to prevent burning.
  • Canned pineapple can be used if fresh is not available.
  • Use chicken thighs for extra juiciness.
  • Serve with rice, salad, or grilled vegetables.
  • Do not reuse marinade unless it has been cooked.
