Ingredients
- 1 lb boneless, skinless chicken breast, cut into cubes
- 2 cups fresh pineapple chunks
- 3 tablespoons honey
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon ketchup
- 1 tablespoon olive oil
- 1 teaspoon grated ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- Wooden or metal skewers
- Chopped green onions and sesame seeds for garnish (optional)
Instructions
- In a bowl, whisk together honey, minced garlic, soy sauce, ketchup, olive oil, ginger, lemon juice, salt, and black pepper.
- Add chicken cubes to the marinade and toss to coat. Cover and marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
- Preheat grill or oven to medium-high heat (about 400°F / 200°C).
- Thread marinated chicken and pineapple chunks alternately onto skewers.
- Place skewers on the grill or a lined baking sheet.
- Cook for 12–15 minutes, turning occasionally and brushing with extra marinade, until chicken is fully cooked and slightly charred.
- Remove from heat and let rest for a few minutes.
- Garnish with chopped green onions and sesame seeds if desired, then serve.
Notes
- Soak wooden skewers in water for 20 minutes to prevent burning.
- Canned pineapple can be used if fresh is not available.
- Use chicken thighs for extra juiciness.
- Serve with rice, salad, or grilled vegetables.
- Do not reuse marinade unless it has been cooked.
