A rich and creamy no-bake chocolate éclair cake layered with graham crackers, vanilla pudding filling, and smooth chocolate ganache—an easy dessert that tastes just like classic éclairs.
Ingredients
- 2 boxes graham crackers
- 2 packs instant vanilla pudding mix
- 3 cups cold milk
- 250g cream cheese, softened
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1/2 cup heavy cream (for ganache)
Instructions
- In a bowl, whisk vanilla pudding mix with cold milk until thickened.
- In another bowl, beat cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing well.
- Whip 1 cup heavy cream until soft peaks form and fold into the cream cheese mixture.
- Fold the pudding into the cream cheese mixture until smooth.
- Arrange a layer of graham crackers in the bottom of a baking dish.
- Spread half of the pudding mixture over the crackers.
- Repeat layers and finish with a final layer of graham crackers.
- Heat 1/2 cup heavy cream until hot and pour over chocolate chips.
- Stir until smooth to create ganache.
- Spread ganache evenly over the top layer.
- Refrigerate for at least 6 hours or overnight before serving.

- Chill overnight for the best soft cake-like texture.
- Use dark chocolate for a richer topping.
