A rich and creamy no-bake chocolate éclair cake layered with graham crackers, vanilla pudding filling, and smooth chocolate ganache—an easy dessert that tastes just like classic éclairs.


Ingredients

  • 2 boxes graham crackers
  • 2 packs instant vanilla pudding mix
  • 3 cups cold milk
  • 250g cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1/2 cup heavy cream (for ganache)


Instructions

  1. In a bowl, whisk vanilla pudding mix with cold milk until thickened.
  2. In another bowl, beat cream cheese until smooth.
  3. Add powdered sugar and vanilla extract, mixing well.
  4. Whip 1 cup heavy cream until soft peaks form and fold into the cream cheese mixture.
  5. Fold the pudding into the cream cheese mixture until smooth.
  6. Arrange a layer of graham crackers in the bottom of a baking dish.
  7. Spread half of the pudding mixture over the crackers.
  8. Repeat layers and finish with a final layer of graham crackers.
  9. Heat 1/2 cup heavy cream until hot and pour over chocolate chips.
  10. Stir until smooth to create ganache.
  11. Spread ganache evenly over the top layer.
  12. Refrigerate for at least 6 hours or overnight before serving.
