Ingredients
- 3 cups fresh peaches, peeled and diced
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup peach nectar
- 1 package (3.4 oz) instant vanilla pudding mix
- 2 cups whipped topping, thawed
- 20 ladyfinger cookies or vanilla wafers
- 1 tablespoon peach preserves (optional)
- Fresh peach slices for garnish
- Fresh mint leaves for garnish
Instructions
- In a bowl, combine diced peaches, granulated sugar, and lemon juice. Let sit for 10 minutes.
- In a separate bowl, beat cream cheese until smooth.
- Add powdered sugar and vanilla extract and mix until creamy.
- Whisk peach nectar and vanilla pudding mix together until thickened.
- Fold the pudding mixture into the cream cheese mixture.
- Gently fold in the whipped topping until light and fluffy.
- Arrange a layer of ladyfingers or vanilla wafers in the bottom of a serving dish.
- Spread one-third of the cream mixture over the cookies.
- Add a layer of peaches.
- Repeat layers until all ingredients are used, ending with a cream layer.
- Swirl peach preserves on top if desired.
- Cover and refrigerate for at least 4 hours or overnight.
- Garnish with fresh peach slices and mint before serving.
- Serve chilled.
