Peach Bellini Cream Dessert is a light and elegant no-bake treat inspired by the classic Bellini cocktail. Layers of sweet peaches, fluffy vanilla cream, and delicate cookies create a refreshing dessert perfect for summer gatherings and special occasions.


Ingredients

  • 3 cups fresh peaches, peeled and diced
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup peach nectar
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 cups whipped topping, thawed
  • 20 ladyfinger cookies or vanilla wafers
  • 1 tablespoon peach preserves (optional)
  • Fresh peach slices for garnish
  • Fresh mint leaves for garnish


Instructions

  1. In a bowl, combine diced peaches, granulated sugar, and lemon juice. Let sit for 10 minutes.
  2. In a separate bowl, beat cream cheese until smooth.
  3. Add powdered sugar and vanilla extract and mix until creamy.
  4. Whisk peach nectar and vanilla pudding mix together until thickened.
  5. Fold the pudding mixture into the cream cheese mixture.
  6. Gently fold in the whipped topping until light and fluffy.
  7. Arrange a layer of ladyfingers or vanilla wafers in the bottom of a serving dish.
  8. Spread one-third of the cream mixture over the cookies.
  9. Add a layer of peaches.
  10. Repeat layers until all ingredients are used, ending with a cream layer.
  11. Swirl peach preserves on top if desired.
  12. Cover and refrigerate for at least 4 hours or overnight.
  13. Garnish with fresh peach slices and mint before serving.
  14. Serve chilled.
