Ingredients
- 2 sleeves graham crackers
- 4 cups peaches, peeled and diced (fresh, canned, or frozen)
- 1/3 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon lemon juice
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 1/2 cups cold milk
- 2 cups whipped topping, divided
- 1/2 cup crushed vanilla wafers
- 1 tablespoon melted butter
Instructions
- In a saucepan, combine peaches, brown sugar, cinnamon, nutmeg, and lemon juice.
- Cook over medium heat for 8-10 minutes until peaches soften and the mixture thickens slightly. Cool completely.
- In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- In another bowl, whisk vanilla pudding mix with cold milk until thickened.
- Fold the pudding into the cream cheese mixture.
- Fold in 1 cup of whipped topping until fully combined.
- Arrange a layer of graham crackers in the bottom of a 9×13-inch dish.
- Spread half of the cream filling over the crackers.
- Spoon half of the peach mixture over the filling.
- Repeat layers with remaining graham crackers, cream filling, and peaches.
- Top with the remaining whipped topping.
- Mix crushed vanilla wafers with melted butter and sprinkle over the top.
- Cover and refrigerate for at least 6 hours or overnight.
- Slice and serve chilled.
Notes
- Fresh ripe peaches provide the best flavor, but canned peaches can be used when drained well.
- Allow the peach mixture to cool completely before assembling.
