Peach Cobbler Icebox Delight is a refreshing no-bake dessert layered with buttery graham crackers, creamy vanilla filling, cinnamon-spiced peaches, and whipped topping. It captures all the flavors of classic peach cobbler in a cool and creamy icebox treat.


Ingredients

  • 2 sleeves graham crackers
  • 4 cups peaches, peeled and diced (fresh, canned, or frozen)
  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • 2 cups whipped topping, divided
  • 1/2 cup crushed vanilla wafers
  • 1 tablespoon melted butter


Instructions

  1. In a saucepan, combine peaches, brown sugar, cinnamon, nutmeg, and lemon juice.
  2. Cook over medium heat for 8-10 minutes until peaches soften and the mixture thickens slightly. Cool completely.
  3. In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  4. In another bowl, whisk vanilla pudding mix with cold milk until thickened.
  5. Fold the pudding into the cream cheese mixture.
  6. Fold in 1 cup of whipped topping until fully combined.
  7. Arrange a layer of graham crackers in the bottom of a 9×13-inch dish.
  8. Spread half of the cream filling over the crackers.
  9. Spoon half of the peach mixture over the filling.
  10. Repeat layers with remaining graham crackers, cream filling, and peaches.
  11. Top with the remaining whipped topping.
  12. Mix crushed vanilla wafers with melted butter and sprinkle over the top.
  13. Cover and refrigerate for at least 6 hours or overnight.
  14. Slice and serve chilled.

  • Fresh ripe peaches provide the best flavor, but canned peaches can be used when drained well.
