Ingredients

  • 1 cup oat flour
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/4 cup peanut butter or almond butter
  • 1/4 cup maple syrup or honey
  • 1/4 cup milk
  • 1/3 cup mini chocolate chips
  • 200g cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1/4 cup powdered sugar or sugar substitute
  • 1 teaspoon vanilla extract


Instructions

  1. In a bowl, mix oat flour, protein powder, nut butter, maple syrup, and milk until a dough forms.
  2. Fold in mini chocolate chips.
  3. Press a portion of the dough into the bottom of serving cups to form the base.
  4. In another bowl, beat cream cheese until smooth.
  5. Add Greek yogurt, powdered sugar, and vanilla extract. Mix until creamy.
  6. Spoon or pipe the cheesecake mixture over the cookie dough base.
  7. Top with extra cookie dough pieces or chocolate chips.
  8. Refrigerate for at least 1 hour before serving.
