Ingredients

  • 200g white chocolate, chopped
  • 1 cup heavy cream
  • 200g cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 2 tablespoons raspberry jam
  • 1 tablespoon lemon juice
  • Crushed cookies or biscuit crumbs (optional for base)
  • Fresh raspberries and white chocolate shavings for garnish


Instructions

  1. Melt white chocolate gently and let cool slightly.
  2. In a bowl, beat cream cheese until smooth.
  3. Add powdered sugar and vanilla extract, mixing well.
  4. Fold melted white chocolate into the cream cheese mixture.
  5. In another bowl, whip heavy cream until soft peaks form.
  6. Fold whipped cream gently into the white chocolate mixture.
  7. In a small saucepan, heat raspberries, raspberry jam, and lemon juice for 3-4 minutes until slightly thickened.
  8. Let raspberry mixture cool completely.
  9. Add cookie crumbs to serving cups if using.
  10. Layer mousse and raspberry mixture into cups.
  11. Chill for at least 2 hours before serving.
  12. Garnish with fresh raspberries and white chocolate shavings.
