Ingredients

  • 1 cup white chocolate chips

  • 1 teaspoon instant espresso powder
  • 1 1/2 cups heavy whipping cream, cold
  • 1/2 cup raspberry preserves
  • 1 cup fresh raspberries, plus extra for garnish
  • 1/4 cup white chocolate shavings
  • Fresh mint leaves for garnish (optional)


Instructions

  1. Heat 1/4 cup heavy cream until just steaming, then pour over the white chocolate chips. Let stand for 2 minutes and stir until smooth. Cool slightly.
  2. Beat the cream cheese until smooth.
  3. Add powdered sugar, vanilla extract, and espresso powder, mixing until fully combined.
  4. Blend in the melted white chocolate mixture until smooth.
  5. In a separate bowl, whip the cold heavy whipping cream to stiff peaks.

  7. Spoon or pipe a layer of mousse into serving cups.
  8. Add a thin layer of raspberry preserves and a few fresh raspberries.
  9. Repeat the layers, finishing with mousse.
  10. Refrigerate for at least 2 hours to set.
  11. Garnish with fresh raspberries, white chocolate shavings, and mint leaves before serving.
