Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 2 ripe bananas, mashed
  • 1 package (3.4 oz) instant banana cream pudding mix
  • 2 cups cold milk
  • 1 cup salted caramel sauce, divided
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 banana, sliced for garnish
  • Flaky sea salt for garnish


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in vanilla extract and mashed bananas.
  6. Alternate adding the dry ingredients and buttermilk, mixing until just combined.
  7. Divide batter evenly between the prepared pans.
  8. Bake for 28-32 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool cakes completely.
  10. Whisk banana pudding mix with cold milk until thickened and chill for 5 minutes.
  11. Whip heavy cream with powdered sugar until stiff peaks form.
  12. Fold half of the whipped cream into the banana pudding mixture to create the banana cream filling.
  13. Place one cake layer on a serving plate and spread with half of the banana cream filling.
  14. Drizzle with 1/3 cup salted caramel sauce.
  15. Top with the second cake layer.
  16. Frost the cake with the remaining whipped cream.
  17. Drizzle the remaining salted caramel sauce over the top.
  18. Garnish with banana slices and a light sprinkle of flaky sea salt.
  19. Chill for at least 1 hour before serving.
