Sheet Pan Shrimp Fajitas are a quick and flavorful one-pan meal with juicy shrimp, colorful peppers, and onions roasted in bold spices—perfect for an easy weeknight dinner.
Ingredients
- 500 g large shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 1 tbsp lime juice
- 8 small tortillas (for serving)
- Fresh cilantro, chopped (optional)
Instructions
- Preheat oven to 200°C (400°F) and line a sheet pan with parchment paper.
- In a large bowl, toss shrimp with olive oil, chili powder, paprika, cumin, garlic powder, onion powder, salt, and black pepper.
- On the sheet pan, spread sliced bell peppers and onion.
- Arrange seasoned shrimp evenly over the vegetables.
- Bake for 10–12 minutes until shrimp are pink and cooked through.
- Remove from oven and drizzle with lime juice.
- Garnish with chopped cilantro if desired.
- Serve with warm tortillas.

- Do not overcook shrimp—they cook very quickly.
- Warm tortillas before serving for best texture.
- Add sour cream or guacamole as toppings.
