Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup whipped topping
- 3 cups fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar (for glaze)
- 2 tbsp cornstarch
- 1/2 cup water
- 1 tbsp lemon juice
Instructions
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until evenly coated.
- Press the mixture firmly into the bottom and sides of a 9-inch pie pan to form the crust.
- Chill the crust in the refrigerator for 20 minutes to set.
- In a mixing bowl, beat cream cheese until smooth and creamy.
- Add powdered sugar and vanilla extract and mix until well combined.
- Fold in the whipped topping until light and fluffy.
- Spread the cream cheese mixture evenly into the chilled crust.
- Arrange sliced strawberries over the cream cheese layer.
- In a saucepan, combine sugar, cornstarch, and water and cook over medium heat, stirring constantly until thickened and clear.
- Remove from heat and stir in lemon juice. Allow the glaze to cool slightly.
- Pour the glaze evenly over the strawberries.
- Refrigerate the pie for at least 2 hours before slicing and serving.

- For best flavor, use ripe and fresh strawberries.
- The pie can be chilled overnight for a firmer texture.
