Ingredients

  • 1 cup crushed golden cookies or vanilla wafers
  • 3 tablespoons melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, diced
  • 1/2 cup strawberry jam
  • 1/2 cup crushed strawberry-flavored cookies or cereal (for crunch topping)


Instructions

  1. Mix crushed cookies with melted butter and press into the bottom of serving cups to form the crust.
  2. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  3. In a separate bowl, whip heavy cream until stiff peaks form.
  4. Fold whipped cream into the cream cheese mixture.
  5. Spoon or pipe cheesecake filling over the crust layer.
  6. In a small bowl, mix diced strawberries with strawberry jam.
  7. Add a layer of the strawberry mixture on top of the cheesecake.
  8. Sprinkle crushed strawberry cookies or cereal for the crunch topping.
